Happy Thanksgiving To You All!

In the spirit of the Holiday, this was the proclamation made by President George Washington.  It was in recognition of the first Thanksgiving of our new nation.   You might consider reading this at your Thanksgiving gathering?

Thanksgiving Proclamation 1789 By:  President George Washington

Whereas it is the duty of all Nations to acknowledge the providence of Almighty God, to obey his will, to be grateful for his benefits, and humbly to implore his protection and favor, and whereas both Houses of Congress have by their joint Committee requested me “to recommend to the People of the United States a day of public thanksgiving and prayer to be observed by acknowledging with grateful hearts the many signal favors of Almighty God especially by affording them an opportunity peaceably to establish a form of government for their safety and happiness.

Now therefore I do recommend and assign Thursday the 26th day of November next to be devoted by the People of these States to the service of that great and glorious Being, who is the beneficent Author of all the good that was, that is, or that will be.

That we may then all unite in rendering unto him our sincere and humble thanks, for his kind care and protection of the People of this Country previous to their becoming a Nation, for the signal and manifold mercies, and the favorable interpositions of his providence, which we experienced in the course and conclusion of the late war, for the great degree of tranquility, union, and plenty, which we have since enjoyed, for the peaceable and rational manner, in which we have been enabled to establish constitutions of government for our safety and happiness, and particularly the national One now lately instituted, for the civil and religious liberty with which we are blessed; and the means we have of acquiring and diffusing useful knowledge; and in general for all the great and various favors which he hath been pleased to confer upon us.

And also that we may then unite in most humbly offering our prayers and supplications to the great Lord and Ruler of Nations and beseech him to pardon our national and other transgressions, to enable us all, whether in public or private stations, to perform our several and relative duties properly and punctually, to render our national government a blessing to all the people, by constantly being a Government of wise, just, and constitutional laws, discreetly and faithfully executed and obeyed, to protect and guide all Sovereigns and Nations (especially such as have shown kindness unto us) and to bless them with good government, peace, and concord.

To promote the knowledge and practice of true religion and virtue, and the increase of science among them and Us, and generally to grant unto all Mankind such a degree of temporal prosperity as he alone knows to be best. Given under my hand at the City of New York the third day of October in the year of our Lord 1789.

Holiday Cards Made Easy!

Oh My Goodness!  I don’t know about you, but Thanksgiving has really snuck up on us!  What a joy to get together with family and see how much the cousins have grown and to fellowship with family that we only see once a year.

It’s also that time of year that we ponder our year and put together a Christmas letter and family photo to send out to family and friends.  I truly love this time of year to also ponder our Lord and Saviour as our True gift for the season!

Do you send out Christmas Cards?  Is it easy and fun to do or is it a daunting task ?

This is what our Christmas Letter/Card Sending process use to look like:

  • Take a family photo or use one that turned out good that year
  • Order Christmas Photo cards from Costco
  • Write a Christmas Letter
  • Buy Holiday stationary and print out Christmas Letters
  • Buy Christmas stamps (this includes a trip to the post office…with 4 kids in tow, unless I can get Kevin to do it!)
  • Stuff, Stamp and Address envelopes (something that would take me a couple of evenings to do!)  OH-YA!  I’d also put stickers on the outside of the envelopes.
  • Drive to post office with 4 kids in tow and mail Christmas Cards.

Whew….  that just seems like a lot of work!  And it WAS… (and time and money)  But we did it anyhow, because we thought it was important.

This is what our Christmas Letter/Card Sending process looks like now:

  • Take a family photo or use one that turned out good that year
  • Log into SendOutCards and Create a Card:

Upload family photo, write Christmas letter, upload another photo of the kids

  • Choose who to send the card to and Click Send.

Done! I can go back to my holiday cookie baking and spending time with my husband in the evenings!  AND they turn out Beautifully!  I am always impressed!

Is something that you would be interested in too?

SendOutCards (SOC) has been a part of our lives for over 2 years now.  I LOVE THIS SYSTEM!  Why?  You might ask.  It has made this area of my life Simple and Easy by providing a way to send a card in minutes without having to address an envelope, find a stamp and run to the mailbox.   See examples HERE.

Holiday Card Sending is just one of the convenient features of SendOutCards.  A few of my other favorite features include:

  1. The Reminder System >> I get an email reminder about 7 days prior to a Birthday, Anniversary etc… with a quick link to go create and send a card!
  2. The ability to fill up a card with photos of the kids and send it to long distance family! (Grandparents)  No more sending digital photos to Fred Meyers to pick up and then send!  I love this!
  3. Creating Memoirs of family vacations and events!  The easy way to “scrapbook”!  I just create a card with photos of our adventure and send the card to myself.  All for less than $2.50!
  4. The ability to follow a prompting that might be telling me to send a Thank You or Thinking Of You card to someone special in my life.  Without SOC, this wouldn’t be a simple and easy thing to do.  With SOC, I can get a card send in just a few minutes.  That’s powerful!
  5. OH-Ya… and I have my own Handwriting Font and Signature that I can use!  You can’t get more personal than that!

And my most FAVORITE feature ~

SOC stuffs, stamps and sends my cards for me!! And all for less than what I would pay for a Hallmark greeting card at the store…much less.  This equals Simplicity and Ease as a full-time Wife and Homeschooling Mom!

Homemade Crackers!

I’m sure that most of you are like me.

More than once, I have found myself in the cracker aisle of the grocery store browsing over the array of cracker boxes…trying to find a cracker without soybean/canola oil, msg, high fructose corn syrup, sugar etc.  It’s quite the challenge and then I think, “maybe I should learn how to make my own crackers?”  But then, how easy is that?

Well…a couple of months ago I began taking an online Sourdough eCourse.  Each week, we are presented with a new recipe and video instructions.  A few weeks ago, guess what the recipe of the week was!?  Homemade Crackers!!  YES…I was excited too!

So, I did my homework and ventured into making my first batch of homemade (herb) sourdough crackers!  Needless to say, the batch of crackers were a hit and were gone within the first 2 hours.  My husband and kids LOVED them..and I did too!  I guess that’s a good thing?

The next day, I did it again.  But this time, I doubled my recipe and made herb and herb/cheese crackers.  WOW, was I impressed!  Again, these did not last long at my house!

Learn to cook with sourdough in an online, multi-media class! So upon request, here is the recipe >>

INGREDIENTS :

1 cup of sourdough starter (does not have to be a domed phase)

1/3 cup of melted  butter or coconut oil

1+ cup of whole wheat flour

This will be for Herb Crackers, so I will add in 1 tsp. of rosemary, oregano, thyme ( I used an herb blend from costco), 1/4 tsp. baking soda, 1/4 tsp. sea salt.  (See below for more variations of this!)

Phase 1 > In a small bowl, pour in 1 cup of sourdough starter and 1/3 melted butter/coconut oil (not hot!), Stir to combine.  Add 1 cup of whole wheat flour to this mixture.  Stir well.  Add in herbs.  Add additional flour until you have a stiff dough.  You may need to do some kneading in the bowl or on a clean counter to incorporate enough flour once gets too stiff for stirring. Place back in bowl and cover with clean towel.  Set aside to sour for at least 8 hours.

I find it best to mix the 1st phase in the evening before bed.  I let is sour all night and usually bake the crackers after breakfast.  Find what works best for you.

Phase 2 > Place your dough ball on the counter and spread it out a bit with your fingers.  Sprinkle sea salt, herbs and baking soda onto the dough.  Knead the dough well to incorporate all of these goodies.  Split the dough in 3rds.  You will be rolling out 3 batches of dough.  I roll out my dough directly onto a baking stone.  If it starts to stick to my rolling pin, I add a small amount of olive oil to the dough.  Roll out the dough as thin as possible.  When you get it the way you want it, sprinkle some sea salt on top and roll over it again with the rolling pin.  Cut your dough into crackers by using a pizza cutter.  I usually make squares and then triangles.

Bake at 350 degrees for 15 minutes.  Check it after 10 minutes.  The thinner your cracker dough, the faster it will bake! Transfer to a cooling rack and let them cool completely before placing them in a sealed container.  The key to a crispy cracker is to let them cool!

Variations:

Plain Cracker - 1/4 tsp. baking soda, 1/4 tsp. sea salt

Herb – 1 tsp. of rosemary, oregano, thyme ( I used an herb blend from costco), 1/4 tsp. baking soda, 1/4 tsp. sea salt

Cheesy – 1/2 cup of grated cheese (any kind), 1/4 tsp. baking soda, 1/4-1/2 tsp. garlic or onion powder, sprinkle of mustard powder, 1/4 tsp. sea salt.  (Just knead in the grated cheese)

How about substituting some rye flour for the whole wheat and kneading in some caraway seeds!  YUM!

You can create homemade teething biscuits with this same recipe!  Just make it plain and roll out a thicker dough!

Notes:

~ Often times the outside crackers will get done quicker, because they tend to be thinner.  You might need to remove these and let the inner crackers bake a bit longer.

~ You can make different variations of this cracker with 1 recipe.  Just add the appropriate ingredients to each of your 3 sections of dough!

Sourdough can be mastered!  I have been thrilled with all that I have learned so far in GNOWFGLINS Sourdough eCourse!  From starting your own sourdough starter to making crepes, pancakes, dinner rolls, english muffins, gingerbread and more!

My family has had fun tasting all of my many creations…most have turned out rather nicely.  Sometimes, it takes a few tries to get it down, with an old oven an all.
